Hand hygiene a struggle for two Springfield restaurants this week

Two Springfield restaurants need to brush up on their hand hygiene, according to the Springfield-Greene County Health Department's food inspection reports.

At Casa Bella, 4610 S. Campbell Ave., an inspector observed employees not washing their hands when contamination occurs, "such as unclogging the hand sink," according to an Oct. 30 report. The violation was corrected on site and education was provided. Dc Fridge Compressor

Another inspector observed an employee at Habanero's Mexican Cantina, 4406 S. Campbell Ave., handle raw steak with gloves and then fail to wash their hands before putting on new gloves, according to the Oct. 30 report. However, the person in charge stopped the employee and had them wash their hands, then don new gloves.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Amici, 4728 S. Campbell Ave., Springfield. Nov. 1 routine inspection – Result: active. No violations at time of inspection.

Asahi Hibachi and Sushi, 586 E. U.S. Highway 60 East, Republic. Oct. 30 routine inspection – Result: permitted with re-inspection. Discussed proper storage of scoops in rice and proper storage of wet mops. Two priority violations: Observed chicken at 117 degrees Fahrenheit in hot holding unit, which was discarded; observed shrimp on countertop measured 71 degrees, food was discarded and will be held in the prep cooler, not the counter. One non-priority violation: Observed noodles not yet 41 degrees stacked in deep container in walk-in cooler, which was corrected at the time of inspection.

Big Whiskey's American Bar & Grill, 1550 E. Battlefield Road, Springfield. Oct. 28 re-inspection – Result: active. At the time of re-inspection, the dish machine was properly sanitizing. No violations cited.

Three non-priority violations: Observed beans and rice cooling on counter in large plastic containers, rice cooling in plastic containers in two-door reach-in cooler — queso immediately divided into large metal hotel pans, no more than four inches deep, beans divided into metal half pans no more than four inches deep, rice was spread out on sheet pans and wall items were placed in designated cooling area in walk-in cooler, education provided; observed no test strips for quat solution at bar's three-vat sink; observed ice shield in ice machine isn't clean, employee removed shield and cleaned and corrected on site.

Cherokee School, 420 E. Farm Road 182, Springfield. Oct. 30 routine inspection – Result: active. No violations observed.

Disney Elementary School, 4100 S. Fremont Ave., Springfield. Oct. 30 routine inspection – Result: active. No violations noted.

Domino's Pizza, 2642 W. Sunshine St., Springfield. Oct. 27 re-inspection – Result: active. Priority item corrected; flies have been minimized. Core item corrected: Dish racks have been ordered. No priority violations. One non-priority violation: Observed build-up of grease and lime in dish machine.

Fast-n-Friendly No. 1, 2766 N. Kansas Expressway, Springfield. Oct. 30 routine inspection – Result: permitted with re-inspection. Two priority violations: Observed walk-in/reach-in cooler found with ambient temperature of 51 degrees and holding potentially hazardous food products above 41 degrees, which were voluntarily discarded and other products moved to another cold hold unit; observed coffee cream dispenser holding creamer above 41 degrees, product voluntarily discarded. Four priority violations: Observed queso in small single-steam unit at 115 degrees to 120 degrees, which was corrected on site by rapidly reheating above 165 degrees, education provided; observed employee handle raw steak with gloves, remove gloves and put new gloves on without washing hands, person in charge stopped employee and had them wash hands properly before putting on new gloves, corrected on site; observed employee wipe gloved hands on cloth tied to apron, took gloves off and proceeded to put new gloves on without washing hands in between, corrected on site by person in charge having employee remove gloves, wash hands properly and put new gloves on; observed bar dish machine has zero parts per million chlorine, person in charge agrees to call chemical company and will have barware washed in kitchen dish machine, which is operating properly. IHOP No. 5339, 3804 S. Glenstone Outer Road, Springfield. Oct. 31 routine inspection – Result: active. One priority violation: Observed top layer of cooked sausage was 110 degrees on edge of grill, which was promptly reheated to 165 degrees. Two non-priority violations: Observed floors by walk-in refrigerator, under dish line and exhaust hood and vent were not clean and floor in dry storage had syrup on it; observed some areas of grout in dish area and around grill area were badly eroded.

Kum & Go No. 1485, 2650 W. Sunshine St., Springfield. Oct. 27 re-inspection – Result: active. Priority items corrected: Both prep coolers now holding at 41 degrees on top units as required. McBride Elementary School, 5005 S. Farm Road 135, Springfield. Nov. 1 routine inspection – Result: active. One priority violation: Observed several large hotel-size metal pans stored with dirty food-contact surfaces, which were immediately taken to be rewashed, rinsed and sanitized, corrected on site. One non-priority violation: Observed condensate ice build-up on walk-in freezer's compressor lines, the shelf of food under the unit had been moved forward so there is no food under the lines and manager had previously placed work order in on unit.

McDonald's, 1221 E. Kingsley St., Springfield. Oct. 30 routine inspection – Result: active. One priority violation: Observed potentially hazardous food, lettuce, being held at 62 degrees on make line area, which was discarded. No non-priority violations.

Observed potentially hazardous foods not being held at or below 41 degrees, such as almond milk and smoothie mix at 53 degrees, which were voluntarily discarded and re-inspection will occur. One non-priority violation: Observed ice build-up in upright freezer.

Pat's Culinary Cafe - Mercy, 1235 E. Cherokee St., Springfield. Oct. 26 routine inspection – Result: permitted with re-inspection. One priority violation: Observed the sanitizer concentration at the three-vat sink was too weak due to dispenser not functioning properly, and a re-inspection will be performed. No non-priority violations.

Preferred Family Healthcare, 2626 W. College Road, Springfield. Oct. 30 routine inspection – Result: permitted with re-inspection. Discussed replacing piercing blade on can opener. One priority violation: Observed several gnats in the donut case, which was corrected at time of inspection by discarding all products in case and thoroughly cleaning inside of case. No non-priority violations.

Red Robin, 3720 S. Glenstone Outer Road, Springfield. Oct. 26 routine inspection – Result: permitted with re-inspection. A re-inspection will be made on or after Oct. 30 to check fish station prep refrigerator. One priority violation: Observed raw chicken, raw fish and buttermilk were all above 41 degrees in the fish station refrigerator, sliced tomatoes were 47 degrees in an open container in another prep refrigerator. All affected items voluntarily discarded by staff. A re-inspection will be made on or after Oct. 30 to check the unit. One non-priority violation: Observed chemical dispensing station sprays water out when turned on.

One priority violation: Observed waffle fries were at 109 degrees to 110 degrees in hot-hold unit near serving line, waffle fries were reheated to over 165 degrees and unit will be rechecked on Nov. 2. One non-priority violations: Observed walk-in freezer dripping condensate onto boxes of frozen pizza crusts, which were moved away from the compressor. Do not store boxed food under compressor until repaired.
